Ingredients:
• 125g oat flour
• 125g almond flour
• Pinch of salt
• 3 eggs
• 70g honey
• 230g yoghurt
• 35g coconut oil
• 2 tsp vanilla extract
• 2 tsp cinnamon
• 1 tsp baking powder
• 1 tsp baking soda + lemon juice
For the apple filling:
• 3 apples
• 40g raisins
• 2 tsp cinnamon
• 1 tsp arrowroot + some water
• honey to taste
• 1 tsp gingerbread spice
Instructions:
• Preheat the oven to 170 degrees
• Combine all the ingredients (except those meant for the apple filling) in a bowl and mix until combined
• Cut the apples into little pieces
• Heat some oil in a baking pan and fry the apples with the raisins, cinnamon, gingerbread spice and honey
• In the mean time, add the arrowroot into a little bowl and add some cold water before mixing it well. Add this to the apples and bake until thickened
• Add half of the apple mixture to your batter and divide it over a 20cm cake tin
• Use the other half of your apple mixture as a topping and put it in the oven for around 60 minutes, or until a toothpick comes out clean from the center
• Let it cool off completely before cutting and eating!
