Brownie-tiramisu Brownie

Recipe name: Brownie tiramisu

Ingredients;

    • 90g butter

    • 180g dark chocolate

    • 2 eggs

    • 1 tsp vanilla extract

    • 1/2 tsp vanilla powder

    • 100g honey

    • 1 shot espresso

    • 30g spelt flour

  • 90g almond flour

    Espresso cream Ingredients:

    • 200ml thickened cream

    • 200g mascarpone

    • 1 shot espresso

    • optional: +- 1 tbsp honey.

Instructions

  • Preheat the oven to 180 degrees
  • Add the butter and chocolate to a small bowl and heat in the microwave until melted, stir
    until combined.
  • Add the chocolate mix to a mixing bowl and stir in the eggs, vanille extract, vanilla powder,
    espresso, honey and flours.
  • Mix this until combined and add to a parchment lined oven dish
  • Bake for 25-30 minutes, or until a toothpick comes out almost clean
  • While your brownie is baking, you can start making the espresso cream by adding the
    thickened cream into a bowl
  • Beat this for 30 seconds before the mascarpone and continue mixing until peaks form
    (careful not to overbeat!)
  • Fold in the espresso and optional the honey
  • Top the brownies with espresso cream and let it cool off in the refrigerator
  • Dust some cacao powder on top before serving and enjoy!
