Ingredients (for 12 muffins);
• 4bananas
• 4 eggs
• 100 grams almond flour
• 100 grams oat flour
• 50 grams Medjool dates
• 250 grams blueberries (or any other fruit)
• 1 teaspoon baking powder
• 2 teaspoons cinnamon or pumpkin spice
• 4 teaspoons ground flaxseed
Instructions;
• Preheat the oven to 180°C (350°F).
• Place the bananas and dates in a blender and blend until smooth.
• Meanwhile, beat the eggs in a large mixing bowl.
• Add the banana-date mixture to the eggs and mix well.
• Stir in the flours, baking powder, and flaxseed until fully combined.
• Gently fold in the blueberries or any other fruit of your choice.
• Spoon the mixture into muffin cups or a muffin tin and bake for 25-30 minutes.
• Let the muffins cool in the fridge for at least 2 hours before serving!
