Creamy cashew pasta-sauce

Ingredients (for 6 servings):
• 400 gram cherry tomatoes
• 750 gram big tomatoes
• 2 big onions
• 2 red peppers
• 1 garlic bunch
• 200 grams cashew nuts (unsalted)
• 1kg minced beef
• 1kg pasta
• 2 tsp sambal
• 1 tsp garlic paste
• 1 tsp red pesto
• pepper, salt, italian herbs, chili powder, basil and paprika powder

Instructions:
• Preheat the oven on 180 degrees and get a oven dish with a sheet of baking paper
• Add the cherry tomatoes, big tomatoes, red peppers and onions
• Cut the top half of the garlic bunch and add some olive oil before placing it upside down on the oven dish
• Pour some olive oil over the vegetables and add all the herbs
• Place the dish in the preheated oven for 30 minutes
• In the meantime, cook some pasta and fry the minced beef
• When the vegetables are ready, take out of the oven and pour into a food-processor. Mix until it has a smooth consistency
• Add the processed cashew nuts, garlic paste, pesto and sambal and mix until combined
• Add the sauce to the minced beef and serve with the pasta
